Can someone fix this chili sauce recipe so I could figure out how to make it? It was my mom’s?

Chili Sauce

1 Bushel of tomatoes
3 mangoes
2 banana peppers
½ hot pepper
1 ½ stalks of celery
5 lbs onions
salt, cinnamon and ground cloves
2 tsp. mixed pickling spices (in a strainer bag or cheesecloth)
2 cloves garlic
½ box brown sugar
¾ qt. white vinegar

that is all I could find of the recipe…

not exactly sure of the amounts of the salt, cinnamon and ground cloves…

I have a feeling the celery is 1 1/2 bunches not sticks.

we had a garden so not sure how many tomatoes in a bushel?

3/4 qt is how much cups?

She cooked it in a very large pot (20qt?).

I think she blanched the tomatoes and then put them thru a twirly sieve thingy that squished them and left the skins behind. what is the name of the twirly sieve thingy?

mee maw, thanks I did wonder about the mangoes, because we never bought any wierd stuff, but we did grow sweet peppers and she maybe did call them mangoes…
sorry, that was mrs. momma who came up with the mangoes are really bell peppers idea..thanks..I had forgotten her calling them that and the mangoes had me scratching my head..
mee maw, thanks for the smaller recipe to try..will substitute bell pepper for the mangoes..I believe that my mom did call bell peppers mangoes, now that mrs momma reminded me of that…..
note- I could be wrong on the food mill..could have been used for tomato sauce….

Fish in Garlic Sauce

Use only Clarified butter (dont think of using margarine) Dust the fillets lightly with flour. Meanwhile, heat some of the clarified butter in a frying pan until hot but not smoking. Saute the fish until lightly browned (some Mexican cooks fry fish until it is the approximate consistancy of our potato chips , but I feel this is taking authenticity a bit too far :-

Remove the fish from the pan, and add additional butter if needed (you will want about 2-3 Tbsp. of melted butter per fillet to sauce the finished dish). Add garlic to the pan and saute garlic until it is a light brown color. Do not allow it to burn, but do allow the garlic to take on some color and become slightly crisp. Squeeze in the lime juice. Pour the hot butter/garlic mixture over the fish, and serve. This dish is quite common in Southern Mexico, and traditionally would be served with black beans (either whole or refried); perhaps a simple dish of rice, cooked in chicken broth with chopped cilantro and a few diced green chiles; a side relish of homemade fresh salsa (see Pico de Gallo).

Remove any skin and bones from fish, rinse and pat dry with paper towels. Cut into large chunks. Mix together cumin, coriander, ground anise, chile powder, garlic, lemon juice and salt, blending to a smooth paste. Spread over fish, cover and refrigerate 1 hour. Half-fill a deep pan or deep-fryer with oil and heat to 350 degrees F. or until a 1-inch bread cube browns in 50 seconds. Cook fish, a few pieces at a time, 2 to 3 minutes, until golden brown. Chinese Cooking – The Secret Is In The Sauce

Chinese cooking night is a wonderful tradition that my family has created over the years and one that we have all come to love! On this special night once a month, my aunts, grandmas, parents and even my two brothers and their families clear their hectic schedules and gather around the family kitchen to whip up a savory and delicious meal straight from the Orient. Why Chinese food, you ask? Of all the different cuisines we have tried throughout the years, Chinese recipes are easy to follow, the food is delicious and Chinese cooking sauces have become our favorite. Their adaptability and variety of flavorful spices is loved by the whole family.

One thing we learned very early on is that Chinese food and Chinese cooking are greatly complimented by the key ingredients of the sauces. You can see this very easily in the American Chinese food cooking trends. It is mainly a mixture of vegetables enhanced with Chinese sauces. These cooking sauces are used as garnishes and in preparing many types of delicious authentic recipes. Most of our favorite Chinese dishes, like noodles and fried rice are made with a variety of spices and sauces making them very popular and savory meals.

In America, Chinese food has been used in ways that are non traditional and has taken on some of its own new traditions. Their sauces have become famous as dipping sauces and cooking sauces that are mainly used for different types of meat dishes like pork or chicken.
